Cabal Cellars tasting room was our last stop for the day. So far we had paced ourselves really well and were very proud of ourselves.
If your are familiar with Jerome, it is at the lowest part of the main streets right at the “y”. So heading deeper into town means it is only uphill from here. The venue has a bar for tasting and a pair of facing couches for seating as well. The couches are fine for tall people, and not so much for those who are shorter. Luckily they had several pillows that Taunya could put behind her back so over all it was comfortable for her. I don’t know if we had mentioned it in a previous feature, but on this day we were tasting with some friends, so a couch section for four was welcome so that we could sit, taste and chat.
We, once again, opted for the red flight. Surprise! Oh, but they really only have seven wines anyway, so we just skipped the two whites. Starting with the Rose, we decided to share a tasting on this one. The Rose, to me was just a typical Rose. Nothing special about it, but then again, I am not a fan of Rose and so they all really taste the same to me.
Their 2017 Prohibition Mourvèdre, on the other hand, was one of the best I have ever had. It was much darker and deeper in flavor than a normal Mourvèdre, which are typically a light easy to drink anytime wine. This was easy drink any time as well, but it had a much better flavor. The rest of the wines are all good, but the Mourvèdre stuck out the most for me because of its difference to any other we had before. I liked the 2017 Conspiracy as well, but the rest were good, decent even, but not outstanding.
The fun thing about Cabal is their labels are all about conspiracies, so when you look at the label there is a story about a conspiracy within it. It is a fun little concept. Also their winery logo is the Eye of Providence with the eye covered by a black bar. I can only assume the bar is symbolism for people putting a blind eye to conspiracies, but we didn’t get a useful answer from our tasting associate. I did feel like the average price point on the wines was a bit higher than average, and a bit high for the wine itself. Therefore we ended up not purchasing any bottles, although we did waiver a bit on the Mourvèdre but ultimately declined.
Just an FYI, the walk back up the hill is a doozy, especially since it was 103 °F that day! When walking around town take your time and enjoy the view, especially if it is hot out!
